2 Day Chef Knife Workshop

Spend 2 days with me in my shop and make your own hidden tang chef knife from scratch. I will take you through each step of the process, from choosing a design to heat treating and grinding the blade, and finally attaching and shaping the handle. Students will leave with a beautiful, high performance knife they made with their own hands.

• no experience necessary - this is an introductory course and the goal is to have fun and take home something you’re proud of. We’ll be making Japanese style hidden tang stock removal knives (so no forging).

• class size is limited to 2 students per workshop which means more one on one time with the instructor (to arrange for a larger group please inquire)

• safety equipment will be provided but please wear closed toe shoes and clothes you don’t mind getting dirty

• we’ll work from 9 until 5 both days with a 1 hour break for lunch

• Food and accommodations are not included but we can provide you with a list of options in the area

$750 USD (includes all materials)

Intermediate & Advanced 1-on-1 Workshops

Students who already have experience making knives and/or have already taken the 2 Day Chef Knife Workshop can deepen their learning, and strengthen their skills in the areas of their choosing. Just reach out to discuss how I can tailor a workshop to accommodate you.

Possible topics include:

• Blade forging - stainless blades, San mai/damascus blades, integral bolsters, forging to shape, etc.

• Advanced blade grinding - high performance blade geometry, compound grinds, belt finishing

• Culinary knife design

• Hidden tang handles - design, construction, various styles

• Pattern welded steel fabrication - San mai, Damascus, etc.

• And lots more, feel free to propose your own ideas

How To Find Us

Workshops are held in my shop located 10 minutes from the town of Stanstead, Quebec Canada. The closest airports are Montreal, Quebec (about 1h45m away) or Burlington, Vermont (about 2h15m away). We’re happy to provide you with a list of places to stay. Keep in mind we live in a rural area so there is no Uber or taxi service - you’ll want to have a vehicle.
